Marie’s Depression Cake – 2nd Annual Recipe Tribute To My Mom

Today’s date marks the 13th year of my mom, Marie Ludlow, passing away after surviving breast cancer, most courageously, for twenty years. Last year, I did a tribute to her along with her amazing cheescake recipe. I thought I would, once again, share another one of her tried and true recipes that the family enjoyed for many years.  

This is a quirky, old-fashioned cake notable for what is NOT in it more so  than for what is.  I do not know the exact family history of this cake, all I know is that it is a delicious, super moist, chocolate cake that contains no milk, no butter and no eggs. It is fun to make and comes out exactly the same every time.

Thanks to my sister Linda who just baked this for some of her friends in El Salvador for reminding me about this cake and sending me the recipe. It brought back waves of memories, memories that included an icy cold glass of milk on the side. Enjoy!

MARIE’S DEPRESSION CAKE

Grease and flour a 9 x13 inch pan –
3 cups flour
2 cups sugar
2 tsp baking soda
6 tblsp baking cocoa
2 tsp salt
10 Tblsp oil
2 tsp vanilla
2 tsp vinegar,
2 cups cold water
 
Pour all dry ingredients into a large bowl. Make three depressions in dry mix. Mix together oil, vinegar and vanilla and pour equally into the three depressions. Pour water over entire mix and beat with a spoon until well blended. Bake at 350 for 35 minutes.
 
Chocolate Frosting
1 lb confectioners sugar
6 tbsp baking cocoa
3 tbsp shortening
3 tbsp butter
vanilla to taste
1/4 to 1/2 cup milk
 
Add all ingredients except the milk into a bowl. Add the milk a little at a time until a creamy texture is achieved.

    my mom grew up in the depression and had recipes that may have begun due to a shortage of things like milk and butter and eggs, but were absolutely delicious. this cake sounds scrumptious. thank you for sharing, bunny. i know you’re mother’s looking down on you and smiling with love and pride. *giant super squishy hugs* ♥♥♥

    Well done sis! Did you make the cake yet? I still miss her so much and can still see her in the kitchen baking away measuring everything precisely – that is why it came out the same every time! When I make it is is different every time!!!!! Love you!!!!! ❤
